I’ve concentrated on vegan items on this page, as so many vegetarian foods are readily available. However I’ve included vegetarian products which are meat substitutes.
The recipes on this website which contain canned legumes are simply a quick option for those days when time has got away from you. Using dried legumes is preferable, just remember to rinse them then soak them overnight before boiling. Lentils work fine without soaking.
When using chickpeas, I soak a 375g packet the day before I intend to use them. I boil them for approximately 1½ hours. I use half to make hummus for the week and refrigerate the remaining portion to use in another dish later in the week. I rinse the remaining chickpeas before I use them.
